Growing up in South Carolina, we ate a lots of beans and peas. For New Year's we alwasy ate Hoppin' John made with black eye peas and rice for good luck. In fact, when I'm asked to describe soul food, my first response is black eye peas (followed by collard greens, fried chicken and barbecue). You can serve Black Eye Peas as side dish or like I do in a cold salad with chopped summer vegetables and dressing.
