Vault No. 5 weaves together all of their favorite qualities in a slow-ripened hard cheese: This cheddar begins with Alpine cultures that the cheesemaker—Cabot Creamery—adds during coagulation. These microbes give the cheese a smoother paste that slices with less crumbling, making it much more adapted for melting. Additionally, these cultures are responsible for this cheddar’s sweet and nutty notes which contrast with the salty and savory aromas of traditional cheddar. It’s mellow complexity can turn a newcomer into a Vault 5 fan for life.As your slices get closer to the rind, an earthiness emerges (due to cave aging) that has subtle notes of horseradish & chestnut.
